Dinner for guest from Malaysia






Recently, I received a guest who was ex-Ho Chi Minh residents, Kak Hazel. So cooked simple dishes for dinner. "Biriyani", "Ayam Masak Merah", "udang kunyit" and "dalca daging" were served for dinner on that night. Kak Hazel came with her assistant a local Vietnamese. I can't remember her name. I was happy because they enjoyed the food I served for dinner. 

How to cook simple "Ayam Masak Merah" Suhaila's style?

Ingredients :
Chicken about 10 pcs (a mixed of thigh, wings, and drumstick)
15 dried chilies ( soaked in hot water and blend)
5 shallots
3 garlic
1 holland onion (sliced)
1 lemongrass
1-inch galangal
1-inch ginger
1 spoon full tomato paste/ tomato sauce or ketchup (option)
star anise, cinnamon stick and cardamon (2pcs each)
oil, sugar, and salt

methods:

deep-fried chicken with turmeric and a little bit of salt.
blend shallots, garlic, galangal, and ginger.
smashed the lemongrass
preheat 4 spoon oil
pour in the blended items (chili, shallots, garlic, ginger, and galangal) and smashed lemon grass. After about 3-4 mins add in the star anise, cinnamon, and cardamon. As it fried and mixed well, add in the chili paste and tomato paste. as the oil raised, add in a little bit of water and add in the oil, sugar and salt as well as the fried chicken. Mix well and lastly add in the sliced holland onion. Stir well and simmer until the sauce thicker (about 5-10 mins). Then serve.
