Udang Masak Kerisik & Siakap Tumis Tiram / Prawn in Grounded Roasted Grated Coconut Sauce & Barramundi in Oyster Sauce





Udang Masak Kerisik / Prawn in Pounded Grated Coconut Sauce


Bahan-bahan/ Ingredient :
  1. 1kg udang / 1 kg fresh tiger prawn
  2. 1 labu bawang besar/ 1 onion
  3. 3 biji bawang putih /  3 garlics
  4. 1 ulas serai / Lemon grass
  5. 1/2 inci halia /1/2 inch Ginger
  6. 1/2 inci lengkuas / 1/2 inch Galangal
  7. 1 batang kayu manis / Cinnamon Stick
  8. 2 kuntum bunga lawang / Star Anise
  9. 2 biji buah pelaga / 1 Cardamon
  10. 1sudu kerisik / 1 table spoon pounded roasted grated coconut
  11. 2 cawan santan / 2 cups of coconut milk
  12. 2 sudu serbuk kari / 2 spoon urry powder
  13. 1 sudu cili giling/ boh / 1 spoon chilli paste
  14. 1 sudu teh serbuk jintan manis / 1 spoon annise seed
  15. 1 sudu teh garam / 1 tea spoon salt
  16. 1 sudu teh gula / 1 teaspoon sugar

Cara Memasak :
blend bawang besar, bawang putih , halia dan lengkuas dengan sedikit air. Tumiskan bahan bahan yang dikisar tadi bersama cili giling, kayu manis, bunga lawang dan buah pelaga . Setelah naik bau masukkan serbuk kari, jintan manis, kerisik, garam dan gula serta sedikit air. Setelah itu masukkan udang dan santan. Tutupkan kuali dang tunggu sehingga udang bertukar warna kepada warna merah. Rasa dan kemudian tutupkan api. 

Cooking Method :
Blend item #2 until #6 with a little water. Saute all the blended items until the aroma came out. Add in the chilli paste, cinnamon stick, star anise, cardamon, curry powder and anise seed powder. Add in the coconut milk and finally the prawn. Turn off the stove once the prawn's colour turned red.



Siakap Tumis Tiram/ Fried Barramundi in Oyster Sauce


Bahan-bahan/ Ingeredients :
1 ekor ikan siakap / barramundi
100 gm baby corn
1 labu bawang besar / onion
3 biji bawang putih / garlic
4 biji cili api / bird eye chillies
1 biji cili merah / red chillies
3 sudu sos tiram / oyster sauce
1 keping asam gelugor / garcinia atroviridis
garam dan gula secukup rasa / salt and sugar

Cara Memasak:
Potong ikan kepada 4 bahagian kemudian goreng bersama kunyit dan sedikit garam sehingga garing dan kuning keemasan. Kemudian angkat dan ketepikan.
Ricih bawang, cili padi dan cili merah. Tumiskan bahan bahan yang telah diricih halus tadi, kemudian masukkan sos tiram, asam gelugor, garam dan gula secukup rasa. Kemudian masukkan "baby corn". Setelah "baby corn" agak lembut, kemudian masukkan ikan yang telah digoreng tadi, sedikit air dan biarkan sehingga mereneh.

Method of cooking :
cut the fish into 4 pcs. Fried the fish with salt and turmeric powder until golden brown and put aside. Slices the chillies and onion. Saute the onion and chillies until the aroma came out. Add in the oyster sauce, garnicia atroviridis, salt and sugar. Then add in water and the baby corn and simmer until the baby corn half cooked. Lastly add in the fried fish into the mix and wait until it simmer.
